Ingredients
- 2 oranges (untreated)
- 1 lemon (untreated)
- 200 g fresh tuna steak (about 180 g per steak, 4 fresh tuna steaks)
- Salt
- pepper (ground)
- 2 tbsp olive oil
- 125 ml dry Marsala
- 3 tbsp cold butter

Wash and dry the oranges and lemons hot, then peel the zest of one orange and the lemons very thinly and finely chop. Squeeze all fruit to extract juice.

Season the tuna with salt and pepper and sear in hot oil in a large pan over medium heat for about 3-5 minutes per side (to taste). Remove from pan and keep warm in an oven at 70–80°C.
