Steamed Brasse Chinese Style

Ingredients
- 4 sea bass (prepped, gutted, approx 350 g)
- 2 cm fresh ginger
- 4 red chilies
- 2 Spring Onions
- 3 tbsp rice wine
- 2 tbsp Light soy sauce
- 4 tbsp sesame oil

Wash and pat the fish dry. Peel the ginger and cut into sticks. Wash the chilies and slit lengthwise. Clean the spring onions, trim them, and slice diagonally into rings.

Mix the rice wine, light soy sauce, ginger, and sesame oil in a bowl. Place the fish in a shallow dish, pour the mixture over them, cover with plastic wrap, and refrigerate overnight to marinate.

Remove the fish from the marinade, discard the liquid, place the fish in a lightly oiled, perforated steamer basket, and steam at 90°C for 20 minutes.

Heat the reserved marinade and oil in a pan. Plate the steamed fish, top with spring onions, ginger, and chilies, then pour the hot oil over it. Serve immediately.
