Mini Burger with Scallops and Kohlrabi

- 4 mini hamburger buns
- 1 small kohlrabi
- Salt
- a handful of arugula
- 4 scallops (with coral)
- flour (for dusting)
- 2 tbsp butter
- 3 tbsp olive oil
- Pepper (freshly ground)

Slice the mini hamburger buns horizontally. Peel the kohlrabi and cut 4 thin slices. Cut out round shapes from the kohlrabi slices that match the diameter of the buns. Blanch them in boiling salted water for 3 minutes, shock in cold water, then drain.

Wash and dry the arugula. Wash the scallops and pat them dry with paper towels. Dust them lightly with flour, shaking off excess.

Heat 1 tbsp butter in a pan and lightly brown the buns cut side down. Remove from the pan and set aside. Heat the remaining butter (1 tbsp) and olive oil in the same pan. Sauté the kohlrabi slices and scallops for 1-2 minutes on each side, seasoning with salt and pepper.

Assemble the mini burgers by layering the buns, kohlrabi slices, scallops, and arugula, then secure with wooden skewers.
