Ingredients
- 4 matjes double fillets
- 800 g fennel
- 1 lime (juice and grated zest)
- Salt
- Pepper (freshly ground)
- 3 tbsp olive oil

Wash, trim, cut off the core of the fennel and slice lengthwise into thin strips. Sauté the fennel in hot olive oil in a pan, pour in 1 cup water, season with salt and pepper, cover and cook for about 8 minutes, then leave uncovered to evaporate the liquid. Mix in lime juice and zest and let cool.
