Ingredients
- 4 onions
- 2 Garlic cloves
- 2 tbsp butter
- Salt
- ground pepper
- 6 tbsp dry white wine (e.g., Riesling)
- 8 tbsp crème fraîche
- 5 Tbsp breadcrumbs
- 1 egg yolk
- 8 beef steaks (90-100 g each)
- 2 tbsp clarified butter
- 2 tbsp chives curls for garnish

Preheat the oven grill. Peel, chop onions and garlic, and sauté in hot butter until translucent. Season with salt and pepper, deglaze with wine, remove from heat and let cool. Mix crème fraîche, breadcrumbs, and egg yolk into a thick paste.

Brown steaks in hot clarified butter for about 1 minute per side, season with salt and pepper. Place steaks on greased baking sheet, spread onion mixture over them, and grill under preheated oven for 5-6 minutes until golden brown. Remove, plate on warmed dishes, garnish with chives curls, and serve.
