Ingredients

  • 4 beef steaks (about 160 g each)
  • 25 g butter
  • 1 tbsp Olive Oil
  • 0.5 onion
  • 0.125 l meat broth
  • 0.125 l white wine
  • 1 tbsp fresh green peppercorns
  • 0.125 l heavy cream
  • 500 g starchy potatoes
  • 0.125 l milk
  • 30 g Butter
  • Salt
  • Pepper

Instructions

    Peel the potatoes and cook in salted water for about 25 minutes. Drain, press through a potato sieve, and let steam off.

    Wash the meat, pat dry, season with salt and pepper. Heat butter and olive oil and sear each steak side for 4-5 minutes without overheating. Remove, wrap in foil, and rest.

    Peel and finely chop the onion; sauté in the pan drippings. Add broth, wine, and reduce strongly. Stir in green peppercorns and cream, reduce again, and season with salt and pepper. While still hot, press potatoes through the sieve and mix with butter and warm milk. Season to taste.

    Spoon the potato purée into a piping bag fitted with a large star tip and spray onto parchment-lined baking sheet as rosettes. Bake in a 175°C fan oven for about 8-10 minutes until golden brown.

    Serve steaks with pepper sauce, potato rosettes, and a small side salad.
