Vegetable Ribbon Noodles with Turmeric Pistachio Butter

Ingredients
- 1 Garlic clove
- 1 red chili pepper
- 2 red onions
- 300 g okra pods
- 2 tbsp olive oil
- Salt
- black pepper freshly ground
- 200 ml vegetable broth (instant)
- 350 g wide ribbon noodles
- 150 g California pistachio kernels
- 75 g butter
- turmeric

Peel and finely chop the garlic. Deseed and finely chop the chili. Peel the onions and cut them into strips. Rinse and clean the okra pods.

Heat oil in a pot. Sauté the garlic, chili, and onions. Add the okra and sauté further. Season with salt and pepper. Pour in the broth and simmer covered for about 15 minutes.

Cook the noodles according to package instructions in plenty of boiling salted water until al dente. Roast the pistachios in a pan without added fat until fragrant. Add butter and let it melt. Stir in turmeric. Drain the vegetables and noodles, then mix with the pistachio-turmeric butter. Plate immediately and serve.
