Ingredients

  • 4 pork loin steaks (about 180 g)
  • Salt
  • black pepper (freshly ground)
  • 4 tbsp Vegetable oil
  • 1 tbsp honey
  • 1 pepperoni
  • 60 g coconut flakes
  • 4 Spring Onions
  • 1 bunch spring onions
  • 2 red bell peppers
  • 4 Apricots
  • 100 ml Vegetable broth

Instructions

    Preheat the oven to 160°C with fan and top heat.

    Rinse the pork steaks and pat dry. Season with salt and pepper, then brown them in 2 tbsp hot oil on both sides. Place on a baking tray lined with parchment paper and brush with honey. Wash, trim, and finely chop the pepperoni; mix with coconut flakes and spread over the meat. Bake for 8-10 minutes.

    Wash, trim, and slice the spring onions into rings. Wash, halve, trim, and cut the bell peppers into strips. Wash, halve, pit, and slice the apricots into wedges. Sauté everything together in the remaining hot oil until colorless for 1–2 minutes. Deglaze with broth and simmer gently for 3–4 minutes. Season with salt and pepper.
