Lamb with Peanuts and Pesto

Ingredients
- 8 cloves garlic
- 1 handful basil
- 50 ml mild olive oil
- 40 g pine nuts
- 40 g grated Parmesan cheese
- 500 g boneless lamb shoulder
- Salt
- steak pepper (ground)
- 2 tbsp sunflower oil
- 2 tbsp mustard
- 30 g chopped peanut kernels

Peel and quarter the garlic. Wash and dry the basil, then blend with 2 cloves of garlic, olive oil, pine nuts, and parmesan in a blender to make pesto.

Slice the lamb shoulder into four equal pieces. Season one side of each piece with salt and steak pepper, then distribute the remaining garlic over them. Roll up around the garlic and secure with toothpicks.

Preheat the oven to 230°C (446°F) with upper and lower heat. Heat sunflower oil in a pan and sear the lamb rolls on all sides. Brush with mustard, season again with salt and steak pepper, and sprinkle peanut kernels over them. Transfer to a baking dish and bake for 15–20 minutes.

Remove toothpicks before serving and drizzle the meat with pesto. Serve with pasta tossed with freshly grated parmesan.
