Asian Noodles with Vegetables and Shrimp

- 250 g fresh shrimp
- 250 g surimi (shredded)
- 150 g sugar snap peas
- 1 thick zucchini
- 0.5 Bell pepper
- Salt
- Pepper (freshly ground)
- 2 tbsp freshly squeezed lemon juice
- 2 cloves garlic (finely chopped)
- 1 tbsp fresh lemon zest
- 400 g spaghetti
- Olive oil (extra virgin)

Deseed the bell pepper and slice it lengthwise into thin strips. Wash the zucchini and cut it into thin slices or julienne. Rinse the sugar snap peas. Blanch the sugar snap peas in boiling salted water for 2-3 minutes, then drain. Add the zucchini slices to the same pot of boiling water (from the snap peas) and blanch for 1 minute; drain well.

Cook the noodles in plenty of salted water until al dente. Meanwhile, heat 3 tbsp oil in a large pan over medium heat and gently sauté the garlic and lemon zest for a short time, then add the shrimp and surimi and cook for 2-3 minutes. Add the bell pepper strips, sugar snap peas, and zucchini. Cover and simmer on medium heat for another 2-3 minutes, stirring once or twice; replace the lid immediately after.

Drain the spaghetti and toss it in the pan right away. Mix well with the pan contents and season with 1 tbsp cold oil, lemon juice, salt, and generous pepper. Serve immediately.
