Steak Strips with Grilled Pumpkin and Pesto

- 4 beef steaks (e.g., ribeye)
- 1 tbsp Olive Oil
- 1 tsp peppercorns
- Sea salt
- 125 ml olive oil
- Salt

Roast pine nuts in a dry pan until golden yellow, remove and let cool. Rinse basil, shake dry, and pluck leaves from stems. Peel and halve garlic cloves. Grate Parmesan finely. Blend basil, pine nuts, and garlic in a food processor, gradually adding olive oil until a creamy pesto forms.

Fold in grated Parmesan and season with salt and pepper to taste.

Slice pumpkin into thin rounds, brush with oil, season with salt and pepper, and grill on a hot grill for 8-10 minutes per side.

Take steaks out of the refrigerator about 30 minutes before grilling. Rinse and pat dry. Brush with oil and grill each side for 2-5 minutes (depending on thickness and desired doneness). Crush peppercorns in a mortar and mix with sea salt. Season grilled steaks with this mixture, let rest briefly, then slice into strips. Serve steak strips with pumpkin and pesto.
