Roast beef sandwich with curry cream and grilled pineapple: The Asian snack is a power pack for lunch and provides all essential nutrients.

Ingredients

  • 1 piece pineapple (about 100 g fruit flesh)
  • 1 tsp Rapeseed oil
  • Salt
  • Pepper
  • 3 tbsp yogurt salad cream
  • 1 tsp red curry paste
  • 1 Lime
  • 100 g Chinese cabbage (1 piece)
  • 2 slices rye whole-grain bread (or 1 whole-grain baguette roll)
  • 75 g roast beef slice (without fat edge)

Instructions

    Peel, clean and cut the pineapple into thin slices.

    Heat a grill pan and brush with oil. Grill the pineapple until golden brown. Season with salt and pepper. Remove and let cool.

    Whisk the salad cream with the curry paste. Squeeze the lime and drizzle the juice over the cream. Clean the Chinese cabbage, slice into strips, rinse and pat dry.

    Lightly toast the bread to taste and spread with the curry cream.

    Spread pineapple and Chinese cabbage on one slice of bread. Top with roast beef and place the second slice as a lid. Wrap for take‑out in butter paper.
