Herring Salad with Red Beet, Apples and Potatoes

Ingredients

  • 4 firm potatoes
  • salt, pepper
  • 2 Eggs
  • 4 Bismarck herring fillets
  • 2 cooked red beet roots (pre-cooked and vacuum-packed)
  • 1 apple
  • 4 cornichons
  • 1 onion
  • 4 Tbsp mayonnaise
  • 2 tbsp plain yogurt
  • parsley

Instructions

    Peel the potatoes and boil them in salted water. Let cool, then dice. Hard‑boil the eggs for 10 minutes, cool and quarter.

    Slice the herring into strips, cube the red beet. Peel the apple and cut into very thin strips. Dice the cornichons finely.

    Finely chop the onion and mix with mayonnaise and yogurt. Season with salt and pepper. Toss the potatoes and prepared ingredients briefly with the dressing.

    Rinse the parsley, shake dry and chop. Sprinkle the salad with egg quarters and parsley before serving.
