Ingredients

  • 400 g chocolate (70% cocoa content)
  • 400 g butter
  • 8 eggs
  • 400 g sugar
  • 200 g Flour
  • powdered sugar (for dusting)

Instructions

    Preheat the oven to 210°C. Line a baking sheet with parchment paper. Chop the chocolate into small pieces and melt over a double boiler, then remove from heat and stir in cold butter in chunks.

    Cream together. Separate the eggs. Beat egg whites until stiff peaks form. Whisk yolks with sugar until the mixture turns white‑creamy. Carefully fold this into the cooled chocolate‑butter mixture. Fold in the beaten egg whites. Sift flour over the batter and gently fold it in. Spread the dough evenly onto the baking sheet and bake on the middle rack for about 30 minutes. Gently lift the cake with parchment paper onto a cooling rack and allow to cool. Using a sharp‑edged star cutter or knife, cut 5–7 cm stars from the cooled cake and carefully lift them off the parchment with a spatula. Place in butter paper-lined tins and dust with powdered sugar before gifting.
