Squid with Minced Meat Filling

Ingredients
- 4 squid about 200 g (ready to cook)
- 1 red chili pepper
- 1 Shallot
- 1 Garlic clove
- 250 g minced pork
- 1 egg
- 1 tbsp freshly chopped parsley
- 1 tsp lemon zest (unprocessed)
- 1 tbsp breadcrumbs
- Salt
- Pepper (freshly ground)
- 2 tbsp olive oil
- a splash dry white wine

Wash the cherries, pit them and lightly puree into a chunky consistency. Peel and dice the shallot. Crush the pepper in a mortar. Sauté together with the shallots in hot oil. Deglaze with port wine and lemon juice. Add the cherries and simmer gently for about 15 minutes until slightly thickened. Season with salt.

Wash the squid, cut off the tentacles, clean everything and pat dry. Wash, halve, clean and finely chop the chili pepper. Peel and dice the shallot and garlic. In a bowl combine the minced pork with egg, shallot, garlic, chili, parsley, lemon zest and breadcrumbs; season with salt and pepper. Stuff the squid and secure with toothpicks. Brown all over in a hot pan with oil using the tentacles. Deglaze with wine and cover to cook for 10-15 minutes. Slice and serve with cherry sauce.
