Lobster with Delicate Puff Pastry

Ingredients

  • 2 sheets of filo dough (about 30x40 cm)
  • 1 large carrot
  • 0.25 head of celeriac
  • 0.5 apple (e.g., Granny Smith)
  • 0.25 zucchini
  • Salt
  • 2 tbsp lemon juice
  • 3 tbsp olive oil
  • black pepper (freshly ground)
  • 400 g cooked lobster meat (shredded)

Instructions

    Preheat the oven to 220°C with top and bottom heat.

    Spread the filo dough and cut out 24 circles (about 7 cm) using a round cutter.

    Place them on a baking sheet lined with parchment paper and bake in the preheated oven until light yellow.

    Remove and let cool.

    Peel, trim, and finely dice the carrot, celeriac, and apple. Wash, trim, and finely dice the zucchini as well.

    Mix all vegetable cubes together and blanch briefly in boiling salted water. Drain, shock with cold water, and allow to dry thoroughly. Combine with apple cubes, lemon juice, olive oil, salt, and pepper to taste. Slice the lobster meat into thin strips.

    Layer two filo circles with lobster slices, spoon a bit of the vegetable vinaigrette over them, and cover with another two filo circles. Repeat this process once more, finishing with filo dough on top.

    Serve plated on a dish.
