Spring Soup

Fresh as spring! Delicious spring soup from Spoonsparrow!

Ingredients

  • 2 Spring Onions
  • 1 Garlic clove
  • 1 tbsp butter
  • 400 g Peas (frozen)
  • 1 tbsp freshly grated ginger
  • 600 ml Poultry broth
  • 200 ml heavy cream (at least 30% fat)
  • Salt
  • pepper (ground)
  • 2 tbsp crème fraîche

Instructions

    Clean the spring onions, slice the white parts into rings and finely chop the green. Peel and finely chop the garlic. Sauté the white onion pieces in hot butter together with the garlic, then add the peas and ginger. Deglaze with poultry broth and bring to a boil. Simmer gently for about 10 minutes, then stir in the cream and puree the soup finely.

    If desired strain through a sieve. Add more broth if needed or let it reduce further. Add the spring onion greens and simmer for another 3 minutes. Season with salt and pepper, ladle into bowls, and serve topped with a dollop of crème fraîche.
