Ingredients
- cabbage (narrow-leaf)
- 2 carrots
- 150 g pink mushrooms
- 2 shallots
- 1 walnut-sized piece ginger
- 1 tsp sunflower oil
- 400 ml instant vegetable broth
- iodized salt
- ground pepper
- ground coriander
- fresh coriander leaves
Instructions

Clean the cabbage and cut off the stem. Cut the cabbage into wider strips, slice the carrots into thin sticks. Clean the mushrooms and halve them.

Peel and chop the shallots and ginger. Sauté in hot oil until translucent. Add the cabbage, carrot sticks and mushrooms and stir-fry briefly.

Add the broth. Season with salt, pepper and coriander and simmer for about 10 minutes. Serve on soup bowls and sprinkle with fresh coriander leaves.
