Ingredients
- 1 bundle radishes
- 1 bundle scallions
- 1 handful young birch leaves
- 2 tbsp chopped parsley
- 200 g low‑fat yogurt
- 50 ml whipping cream
- 2 tbsp lemon juice
- Salt
- white pepper

Wash, trim, and slice the radishes into wedges. Trim the scallions, cut them into longer bite‑sized pieces, briefly blanch them. Wash the birch leaves, rinse, and shake off excess water. Mix all greens with parsley in a bowl, lightly salt, divide among three bowls.

Whisk together yogurt, cream, lemon juice, salt, and pepper; taste and adjust seasoning. Spoon the dressing over the bowls of salad and serve immediately.
