Pea Surimi Salad with Dill

A fresh pea and surimi salad featuring dill, served as a vibrant vegetable salad from Spoonsparrow.

Ingredients

  • 400 g peas
  • Salt
  • 200 g surimi
  • 1 small onion
  • 1 bunch dill
  • 2 tbsp white balsamic vinegar
  • 200 g Sour Cream
  • 50 ml whipping cream
  • 3 tbsp Lemon juice
  • Salt
  • white pepper

Instructions

    Thaw the peas. Cook in plenty of salted water for 5 minutes. Slice the surimi into rounds. Peel and finely chop the onion. Wash, dry shake, and roughly chop the dill. Combine all in a bowl and mix with the balsamic vinegar.

    Whisk together the sour cream and whipping cream. Season with lemon juice, salt, and pepper.
