Ingredients

  • 2 sprigs thyme
  • 2 stems Mint
  • 250 g raspberries
  • 2 peaches
  • 500 g tomatoes
  • 250 g Cherry Tomatoes
  • 1 tbsp honey
  • 2 tbsp balsamic vinegar
  • 2 tbsp olive oil
  • Salt
  • Pepper
  • 250 g burrata (Italian fresh cheese)

Instructions

    Wash herbs, pat dry and remove leaves. Wash raspberries, peaches, and tomatoes. Trim tomato stems. Halve peaches, remove pits. Slice tomatoes and peaches into wedges. Halve cherry tomatoes.

    For the dressing, crush about a handful of raspberries with a fork and mix in honey, balsamic vinegar, and olive oil. Season the dressing with salt and pepper.

    Arrange tomatoes and peaches on a large platter. Drain burrata and roughly divide into pieces. Scatter remaining raspberries over the salad, drizzle with dressing, and sprinkle herbs on top.
