Ingredients

  • 3 bunch spring onions
  • 20 sheets frozen spring roll wrappers (asian market)
  • 1 egg yolk
  • oil for frying
  • 1 Papaya
  • Juice of 1 lime
  • brown sugar
  • 1 tsp Sambal oelek
  • Pinch Salt

Instructions

    Clean and wash the spring onions. Cut the firm lower part into finger‑length pieces. Spread a wrapper and brush with egg yolk. Wrap a piece of spring onion in each sheet. Fry in hot oil until golden brown. Drain on paper towels.

    Halve the papaya, remove seeds, peel and dice small. Mix lime juice with sugar, sambal, and salt; combine with papaya cubes. Serve the salsa alongside the fried rolls.
