Ingredients
- 120 g flour
- 1 tsp Baking powder
- a pinch of salt
- 4 eggs
- 150 g sugar
- 400 g dark chocolate couverture
- 75 ml heavy cream (at least 30% fat)
- 200 g coconut flakes

Preheat the oven to 180°C with fan and top/bottom heat. Combine the flour, baking powder and a pinch of salt. Separate the eggs. Beat the egg whites with 4 tbsp cold water until stiff peaks form while gradually adding the sugar. Fold in the yolks. Sift the dry mixture over the wet batter and fold gently.

Spread the batter onto a baking sheet lined with parchment paper. Bake in the preheated oven for 12-15 minutes. Remove and let cool.

Melt the chocolate couverture with the cream in a saucepan. Cut the sponge into 2x5 cm squares and dip each square into the chocolate cream using a fork. Sprinkle with coconut flakes and allow to dry.
