Ingredients

  • 300 ml freshly squeezed lime juice
  • 10 mint leaves
  • 150 g sugar
  • 6 sheets white gelatin
  • lime zest

Instructions

    Soak gelatin in cold water.

    Puree lime juice with the mint leaves.

  3. 3.

    Cook sugar with 2 tbsp water until syrupy, stir in lime juice and top up to 1/2 L with water.

    Squeeze out soaked gelatin and dissolve it in the hot liquid, whisk well.

  5. 5.

    Distribute lemon zest into dessert glasses and pour the liquid over. Chill in the refrigerator for about 4 hours until set. Briefly submerge in hot water before serving.
