Sponge Cake with Apples and Powdered Sugar

Ingredients

  • 3 eggs
  • Salt
  • 100 g raw cane sugar
  • 100 g softened butter
  • 2 tbsp lemon juice
  • 125 g spelt flour (Type 630)
  • 1 tsp Baking powder
  • 2 tbsp chopped almond kernels
  • 12 mini apples (with stems)
  • 1 tbsp powdered sugar from raw cane sugar

    Separate the eggs. Beat the egg whites with a pinch of salt until stiff and fold in 40 g raw cane sugar. Cream together the butter, remaining raw cane sugar, and yolks. Add lemon juice. Mix flour and baking powder, then stir into the batter along with almonds. Fold in the beaten egg whites. Pour the dough into a pan. Wash apples and gently press them into the batter. Bake in a preheated oven at 180 °C (fan: 160 °C; gas: level 2–3) for about 20 minutes. Let cool well, dust with powdered sugar, cut into pieces, and serve.
