- 2 kg elderberries
- 2 ripe pears
- 1.5 kg jelly sugar (1:1)

Wash the elderberries, strip them of stems, discard any bad ones, and cook with a little water until they break down; then strain through a sieve or press through a colander to extract the juice. Measure the juice and mix with an equal amount of jelly sugar.

Add the peeled and finely chopped pears, stir, and bring to a boil. Boil for 4 minutes while bubbling, pour the mixture into well-drained twist-off jars, seal, and place upside down for 10 minutes. Flip again and let cool completely. Store in a cool, dark place.
