Ingredients

  • 300 g flour
  • 100 g sugar
  • 1 pinch salt
  • 1 egg
  • 200 g butter
  • flour (for the work surface)
  • 150 g raspberry jam
  • powdered sugar (for dusting)

Instructions

    Mix the flour with the sugar and salt, sift onto a work surface, make a well in the center, crack the egg into it, and spread the butter in small pieces around the well. With a knife chop all ingredients into crumbs and quickly knead them by hand into a smooth dough. Shape into a ball and wrap in cling film; refrigerate for 30 minutes.

    Preheat the oven to 180 °C (convection). Roll out the dough on a floured surface to a thickness of 0.4 cm and cut out hearts. From half of the hearts cut a small heart from the center. Place all cookies on a parchment-lined baking sheet and bake in the preheated oven for 8–10 minutes until pale yellow. Warm the jam slightly and strain it through a fine sieve.

    Remove the finished cookies from the oven, lift the parchment from the sheets, and let the hearts cool on a wire rack. Spread the full hearts with a little raspberry jam and place a matching counterpart on top. Let dry and dust with powdered sugar before serving.
