Ingredients
- 4 flesh tomatoes
- 0.5 bunch Basil
- 4 tbsp olive oil
- 2 tbsp white balsamic vinegar (or milder white wine vinegar)
- 2 Garlic cloves
- Salt
- black pepper (freshly ground)
- 400 g fusilli

Rinse tomatoes with boiling water, peel, quarter, and seed. Puree half of them. Dice the rest into cubes. Rinse basil, pat dry, set aside a few leaves, finely slice the remaining leaves into strips.

Combine tomato cubes and puree with olive oil and vinegar. Extract garlic through a press and add to the tomatoes. Season everything with salt and pepper. Fold in basil strips at the end. Cook pasta in plenty of salted water until al dente. Drain. Mix cold sauce with hot pasta and serve immediately, garnished with basil.
