Ingredients
- 400 g colorful fusilli
- 400 g Tomatoes
- 1 Shallot
- 1 Garlic clove
- 3 tbsp olive oil
- 2 tsp balsamic vinegar
- Salt
- Pepper (freshly ground)
- 0.5 bunch Basil
- 50 g black olives (pitted)
- 40 g Parmesan
Instructions

Cook pasta in boiling salted water until al dente, drain and set aside.

Score tomatoes crosswise, blanch for a few seconds, shock in cold water, peel, quarter, deseed and dice.

Peel and finely chop shallot; sauté in hot olive oil until translucent, add pressed garlic, then tomatoes. Season with salt, pepper and balsamic vinegar, simmer for about 8 minutes.

Grate parmesan into shavings.

Halve olives and combine with pasta, basil leaves, and tomato sauce; toss, reheat briefly, and serve sprinkled with parmesan shavings.
