Spinach with Paneer in Indian Style

Ingredients

  • 400 g Paneer (Indian cheese)
  • 5 tbsp sesame oil
  • 1 kg young fresh spinach
  • 1 onion
  • 2 Garlic cloves
  • 3 cm fresh ginger
  • 2 tsp coriander powder
  • 1 tsp turmeric powder
  • 1 tsp cumin powder
  • 0.5 tsp chili powder
  • Salt
  • 0.5 tsp Sugar
  • 150 ml heavy cream (at least 30% fat)
  • 4 fresh eggs

Instructions

    Dry the paneer slightly and cut into 1–2 cm cubes. Heat the oil in a pan and lightly fry the paneer cubes over medium heat, stirring for about 4 minutes. Remove and set aside. Wash and roughly chop the spinach; drain well. Dice the onion and garlic finely, peel and grate the ginger. In the remaining oil sauté onion, garlic, and ginger, then add coriander, turmeric, cumin, and chili powder and roast for about 2 minutes. Add the chopped spinach, cover, and cook over medium heat for about 10 minutes. Season with salt and sugar, stir in the cream and paneer, and reheat everything together.

    Meanwhile poach the eggs in plenty of salted water. Distribute the paneer on small bowls, place the poached eggs on top, separate them gently, and serve.
