Broccoli gratin with cheese

- 800 g broccoli florets
- Salt
- 2.5 tbsp butter
- 2 tbsp flour
- 200 ml heavy cream (at least 30% fat)
- 200 g processed cheese
- pepper (ground)
- nutmeg
- 250 g freshly grated parmesan

Preheat the oven to 200 °C with upper and lower heat. Clean the broccoli and blanch it in boiling salted water for 5 minutes. Remove and shock in cold water. Reserve the broccoli cooking liquid.

In a saucepan melt the butter, sprinkle with flour and let it brown. Gradually whisk in 600 ml of the reserved broccoli broth and the cream, bringing the sauce to a boil.

Reduce the heat slightly, stir in the processed cheese, season with salt, pepper, and nutmeg, and simmer for 5 minutes while stirring until thickened. Spread the broccoli into four portion-sized casserole dishes, pour the sauce over it, and sprinkle with the remaining cheese. Bake in the preheated oven for about 15 minutes until golden brown. Remove and serve immediately.
