Ingredients

  • 800 g firm potatoes
  • Salt
  • 3 spring onions
  • 1 handful fenugreek leaves
  • 2 tbsp plant oil
  • 0.25 tsp coriander powder
  • 1 tbsp curry powder
  • 0.5 tsp crushed chili flakes
  • pepper (ground)

Instructions

    Wash the potatoes and parboil them in boiling salted water for 20 minutes. Drain, rinse with cold water, let drain, peel and cool completely. Rinse the spring onions, trim and slice into thin rings. Wash the fenugreek leaves, discard stems, trim and dry.

    Quarter the potatoes. Heat oil in a pan and fry the potatoes until golden brown all around. Add the onions and fenugreek, stir in the spices and cook for another 5-10 minutes. Taste and serve immediately.
