Ingredients
- 750 g spinach (fresh or 600g frozen)
- 2 large onions
- 3 tbsp butter
- 3 cloves garlic
- Salt
- black pepper (ground)
- 4 tbsp olive oil
- 2 tbsp pine nuts
- 8 eggs
Instructions
-
1.
Let frozen spinach thaw, wash fresh spinach thoroughly and remove stems. Peel and finely chop the onions. In a large pot heat the butter and sauté the onions until soft. Add the spinach and let it wilt. Peel the garlic and press half through a garlic press into the pan. Season spinach with salt and pepper.

2.
Heat 2 tbsp oil in a skillet about 20-25 cm wide and roast half the pine nuts until golden brown. Meanwhile, squeeze out excess moisture from the spinach, beat half the eggs and mix with half the spinach. Add this mixture to the skillet with the pine nuts and let it set over gentle heat.

3.
Shake the pan frequently so the tortilla doesn’t stick. Gently lift the tortilla from the edge of the pan, slide onto a plate, flip and finish cooking. Slide the finished tortilla onto a plate and cut into wedges while warm or cold. Repeat the process for the second tortilla with the remaining ingredients.
