Ingredients

  • 2 yellow beets
  • 2 small red beet roots
  • 250 g fresh spinach
  • 1 small blue onion
  • 1 tbsp alfalfa meal
  • 6 tbsp white balsamic vinegar
  • 4 tbsp olive oil (garlic-infused)
  • Salt
  • Pepper

Instructions

    Wash the beets and carefully remove the leaves. Fill a pot with a steamer basket and some salted water, place the beets in the steamer basket. Steam in a covered pot for about 45-60 minutes (depending on size). After 45 minutes, gently poke with a knife tip to check doneness. Remove finished beets and let them cool.

    Meanwhile wash the spinach and shake off excess moisture, then spread it onto plates.

    Peel the shallot, finely dice it, and mix it with the remaining dressing ingredients.

    Thinly peel the cooled beets and slice them into rounds, then distribute over the salad.

    Drizzle everything with the dressing and serve immediately.
