Ingredients

  • 200 g bulgur
  • Salt
  • Pepper (freshly ground)
  • 2 lemons
  • 75 ml olive oil
  • 1 bunch chopped parsley
  • 2 tbsp chopped mint
  • 1 bunch spring onions
  • 3 tomatoes

Instructions

    Cook the bulgur according to package instructions, then let it cool. Transfer to a bowl and season with salt and pepper. Juice the lemons. Stir in the olive oil and lemon juice, letting the mixture rest for about 30 minutes.

    Wash, trim, and finely chop the spring onions. Wash the tomatoes and slice them thinly.

    Fold the parsley, chopped mint, and spring onions into the bulgur and taste. Arrange the salad in serving bowls and top with tomato slices.
