Ingredients

  • 500 g Jerusalem artichokes
  • 1 Carrot
  • 1 stalk Celery
  • 1 apple
  • 2 Nectarines
  • 50 g chopped walnut kernels
  • 1 sprig dill
  • 3 tbsp Walnut Oil
  • 2 tbsp lemon juice
  • Salt
  • a pinch of sugar

Instructions

  1. 1.

    Wash the Jerusalem artichokes, carrot, celery, apple and nectarines. Peel, clean the Jerusalem artichokes, carrot and apple, quarter the apple and remove the core.

    Trim the celery and slice it thinly. Halve the nectarines, pit them, cut a few slices for garnish and peel and finely dice the rest, as well as the carrot.

    Finely grate the Jerusalem artichokes and apple and combine everything in a bowl. Add the walnuts. Pick off the dill, set aside some tips for garnish and finely chop the remainder. Mix the salad with walnut oil and lemon juice, season with salt and sugar. Divide onto bowls and serve garnished with nectarine slices and dill.
