Ingredients
- 200 g young green and red spinach leaves
- 1 large bunch flat-leaf parsley
- 1 Pomegranate
- 1 tbsp balsamic vinegar
- 2 tbsp white wine
- Salt
- freshly ground pepper
- 2 tsp Dijon mustard
- 4 tbsp olive oil
- 100 g French soft cheese (Brie or Camembert)
- 80 g young Parmesan
Instructions

Rinse the spinach leaves, wash and spin dry. Rinse the parsley, shake off excess water and pluck the leaves from the stems. Cut the pomegranate in half and remove the seeds.

Whisk together vinegar, white wine, salt, pepper, mustard and olive oil to make a salad dressing. Slice the soft cheese into rounds. Grate the Parmesan.

Combine the spinach with the parsley and place on plates along with the cheese slices and pomegranate seeds. Sprinkle the grated Parmesan over the top and drizzle the dressing over the salad.
