Spinach Quiche with Cod

Ingredients

  • 250 g flour
  • 0.5 egg
  • 0.5 salt
  • 125 g butter
  • 500 g spinach
  • 1 onion
  • 2 tbsp butter
  • 1 Garlic clove
  • Salt
  • pepper (ground)
  • nutmeg
  • 500 g Cod fillet
  • 2 tbsp lemon juice
  • 3 tbsp chopped dill sprigs
  • 250 g crème fraîche
  • 2 Eggs
  • flour (for the work surface)
  • dill flower (for garnish)

Instructions

    Place flour on a work surface, form a well. Add egg with salt into the well, dot butter around the edge. Cut through with a knife and quickly knead. Cover dough and chill for 30 minutes.

    Meanwhile, clean and rinse spinach, then drain in a sieve. Peel and finely chop onion. Melt butter in a wide pot, sauté onion until translucent. Peel and press garlic into the pot. Add spinach and cook over medium heat for 5 minutes, seasoning with salt, pepper, and nutmeg.

    Rinse cod cold, pat dry, cut into pieces, drizzle with lemon juice, season with salt and pepper. Whisk crème fraîche with eggs and dill, season with salt and pepper. Roll dough on a lightly floured surface to a circle, place in a greased pan and form a 3 cm rim. Drain spinach and spread over the dough, top with cod pieces, then cover with dill cream. Bake in preheated oven at 200°C for about 30 minutes. Serve garnished with dill flowers.
