Ingredients

  • 200 g Flour
  • 150 g butter
  • 1 egg
  • 1 tsp salt
  • butter (for the baking pan)
  • flour (for dusting)
  • 5 leeks
  • 2 tbsp butter
  • 5 eggs
  • 100 ml milk
  • 300 ml whipping cream
  • Salt
  • Pepper (freshly ground)
  • Nutmeg (freshly grated)
  • 100 g Stilton

Instructions

    Knead flour, butter, egg and salt into a shortcrust pastry, wrap in foil and chill for about 30 minutes.

    Preheat the oven to 180°C fan. Butter the quiche tin.

    Roll out the dough on a floured surface slightly larger than the tin and lay it inside, lifting up a rim.

    Wash the leeks, halve lengthwise, clean and slice into strips. Sauté in hot butter until translucent. Spread over the pastry.

    Whisk the eggs with milk and cream for the custard, seasoning with salt, pepper and nutmeg. Pour over the leeks, crumble Stilton on top and bake for about 45 minutes until golden brown.
