Spinach Gratin with Cheese and Almonds

Ingredients

  • 600 g Spinach
  • 1 onion
  • 1 Garlic clove
  • 2 tbsp olive oil
  • Salt
  • nutmeg
  • 100 ml milk (3.5% fat)
  • 50 g crème fraîche
  • 2 Eggs
  • 40 g grated cheese (e.g., Emmental)
  • black pepper (freshly ground)
  • 2 tbsp almond slivers
  • pink peppercorns (for garnish)

Instructions

    Wash, trim and drain the spinach well. Peel and finely chop the onion and garlic. Sauté in hot oil in a pan until translucent. Add the spinach and let it wilt. Evaporate the liquid and season with salt and nutmeg.

    Distribute into four oven-safe ramekins (about 12 cm diameter).

    Whisk together milk, crème fraîche, eggs and cheese; season with salt and pepper. Pour over the spinach and sprinkle almond slivers on top. Bake in a preheated oven at 220 °C (fan: 200 °C; gas: level 3–4) for 10–15 minutes until golden brown.

    Serve sprinkled with pink peppercorns.
