Artichoke Casserole

Mediterranean flair for home: Try the artichoke casserole from Spoonsparrow!

Ingredients

  • 12 small artichokes
  • 1 lemon (juice)
  • 2 Garlic cloves
  • olive oil
  • 1 tbsp thyme
  • Sea salt
  • freshly ground pepper
  • 50 g breadcrumbs
  • 50 g grated Parmesan

Instructions

    Clean and wash the artichokes, remove outer hard leaves, trim stems, peel, and halve each artichoke (remove the choke if needed depending on size). Drizzle halves with lemon juice. Smash unpeeled garlic cloves with palm until slightly cracked. Heat 2-3 tbsp olive oil in a hot pan and add the artichokes. Add garlic cloves and thyme, season with salt and pepper, and sprinkle generously with coarse ground pepper. Deglaze with about 125 ml water. Cover and simmer over medium heat for about 10 minutes, not fully cooked.

    Preheat oven to 200°C (Oven rack in middle).

    Spread the artichokes without liquid in a baking dish, lightly salt and pepper, drizzle with oil. Sprinkle breadcrumbs and Parmesan on top, then bake for 10-15 minutes until golden brown.
