Ground Meat Rolls with Tomato Sauce

Ingredients
- 1 whole-grain roll (from yesterday)
- 50 g pecorino cheese (1 piece)
- 20 g basil (1 bunch)
- 1 Shallot
- 3 tbsp olive oil
- 600 g ground beef tartare
- 1 egg
- Salt
- Pepper
- 2 Garlic cloves
- 1 kg ripe tomatoes
- a pinch of sugar
Instructions

Soak the rolls in lukewarm water. Grate the cheese.

Wash the basil, shake off excess water and finely chop it. Peel and finely chop the shallot.

Heat 1 tbsp oil in a pan. Sauté the shallot over medium heat until translucent. Remove from heat and let cool.

Squeeze out the water from the rolls and knead them with the shallot, tartare, half of the basil, egg, and cheese. Season with salt and pepper. Shape the mixture into long rolls.

Heat 1 tbsp oil in a pan. Brown the rolls on all sides over medium heat for about 5 minutes. Transfer to a baking dish.

Peel and finely chop the garlic. Wash the tomatoes and cut them into large pieces. Heat the remaining oil in a pot. Sauté the garlic until translucent. Add the tomato pieces, season with salt, pepper, and a pinch of sugar, and simmer over medium heat for about 15 minutes.

Strain the sauce, fold in the remaining basil, and spread it over the rolls. Bake in a preheated oven at 120 °C (fan 100 °C; gas: level 1–2) for 10–15 minutes.
