A spinach cheese omelette with salmon is easy to prepare and tastes great for dinner, lunch, or as a perfect take‑away meal.
Ingredients
- 1 small onion
- 200 g Salmon fillet
- 200 g mozzarella
- 200 g spinach
- 5 eggs
- 2 tbsp milk
- 1 tsp butter
- Salt
- Pepper

Peel and finely chop the onion. Wash the salmon, pat dry, then flake or cube it. Slice the mozzarella into rounds. Wash the spinach and shake off excess water.

In a bowl whisk the eggs with the milk. Heat the butter in an oven‑proof skillet over medium heat and sauté the onion for 2 minutes. Pour in the egg mixture, season with salt and pepper, then top with spinach, salmon, and mozzarella.

Bake everything in a preheated oven at 180°C (160°C fan or gas level 2) for about 20–25 minutes until the eggs are set and the filling is firm.
