Fried Chicory

Chicory can be much more than just salad. Spoonsparrow shows you how to prepare fried chicory in no time and how delicious the winter vegetable tastes.

Ingredients

  • 1 tbsp pine nuts
  • 2 chicories
  • 2 tbsp olive oil
  • 1 tbsp acacia honey
  • 2 tbsp balsamic vinegar
  • Salt
  • Pepper

Instructions

    Roast pine nuts in a dry pan over low heat until golden brown, remove and let cool. Wash the chicory whole and pat dry. Trim the base of the stems thinly and cut the heads into quarters (the quarters should stay together).

    Heat oil in a hot pan, add the chicory quarters and fry over medium heat for 2–3 minutes. Drizzle honey over them and deglaze with balsamic vinegar, let simmer for 2 minutes while turning the chicory so it coats well with the golden honey‑balsamic mixture. Lightly salt.
