Spinach and Raspberry Salad

Ingredients

  • 200 g mixed salad greens (Lollo Rosso and Biondo)
  • 150 g spinach leaves
  • 400 g raspberries
  • 4 tbsp white balsamic vinegar
  • 1 tbsp Lemon Juice
  • 1 tsp Honey
  • 4 tbsp grape seed oil
  • Salt

Instructions

    Wash and trim the salad greens and spinach as needed. Drain well and arrange on bowls or plates.

    Rinse the raspberries and roughly puree about one-third with the balsamic vinegar, honey, lemon juice, oil, and 2–3 tbsp water until smooth. Season with salt and drizzle over the salad. Serve garnished with the remaining raspberries.
