Grilled Eggplant Salad with Sun-Dried Tomatoes and Goat Cheese

Ingredients
- 3 eggplants
- Salt
- olive oil
- 4 tbsp balsamic vinegar
- 2 tbsp lemon juice
- 1 tsp Honey
- pepper (ground)
- 2 red onions
- 150 g sun-dried tomatoes (packed in oil)
- 200 g Goat cheese
- basil (for garnish)
Instructions

Wash, trim and cut the eggplants lengthwise into slices. Salt them and let soak in water for about 10 minutes. Pat dry, season with pepper, lightly salt again, drizzle with olive oil and grill for approximately 5 minutes.

Whisk together balsamic vinegar, lemon juice, 2-3 tbsp water, honey, and 4 tbsp olive oil. Season the dressing with salt and pepper to taste.

Peel the onions and finely dice them. Roughly chop the sun-dried tomatoes. Cube the goat cheese.

Arrange the grilled eggplant slices on plates, then scatter the diced onions, chopped tomatoes, and cubed cheese over them. Drizzle with the prepared dressing, season with pepper, and garnish with fresh basil before serving.
