Pizza mit Rauke und Bündner Fleisch

- 20 g fresh yeast
- 150 g flour
- Salt
- 5 tbsp olive oil
- 200 g crushed tomatoes
- ground pepper
- 1 tsp Dried oregano
- 200 g mozzarella
- flour (for rolling out)
- 200 g arugula
- 200 g Cherry tomatoes
- 50 g fresh parmesan
- 80 g Bündner meat

Crush the yeast and mix with 125 ml lukewarm water in a large bowl. Add flour, ½ tsp salt, and 2 tbsp olive oil, then knead with hand mixer hooks until smooth. Cover and let rise in a warm place for 25-30 minutes. Simmer the crushed tomatoes in a non-stick pan for 3-5 minutes, seasoning with salt, pepper, and oregano. Slice mozzarella into rounds.

Roll out the dough on a lightly floured surface to a round shape (24 cm diameter) and line a greased pizza pan. Spread the tomato sauce over the dough and top with mozzarella slices. Bake in a preheated oven at 200°C (gas: level 3-4, fan: 180°C) for 15-20 minutes. Clean and roughly chop arugula; rinse and halve cherry tomatoes. Mix arugula, tomatoes, and parmesan, seasoning with pepper. Remove the pizza from the oven, top with Bündner meat, then spread the arugula-tomato mixture over it and drizzle with remaining olive oil. Bake for an additional 10 minutes. Slice into pieces and serve hot.
