Spinach and Goat Cheese Omelette

Ingredients

  • 200 g fresh baby spinach
  • 8 eggs
  • 4 tbsp heavy cream
  • 150 g goat cheese
  • Salt
  • Pepper (freshly ground)
  • 4 tbsp butter

Instructions

    Preheat the oven to 100°C fan.

    Wash and dry the spinach. Whisk the eggs with the cream, 2 tbsp of cheese, salt, and pepper thoroughly. Melt 1 tbsp of butter in a hot pan and pour about one‑quarter of the egg mixture into it. Let it set for 2–3 minutes over low heat. Remove and keep warm in the oven. Prepare the remaining omelettes similarly. When serving, spread a quarter of the spinach on each and crumble the remaining cheese on top.
