Ingredients
- 10 eggs
- 50 ml whipping cream
- Salt
- Pepper (freshly ground)
- 6 Spring Onions
- vegetable oil (for frying)
- 200 g feta
Instructions

Whisk the eggs with the cream. Season with salt and pepper. Wash, trim, and slice the spring onions into rings.

Sauté 1/4 of the spring onions in a little hot oil in a non-stick pan for 1-2 minutes. Pour 1/4 of the egg mixture over them and sprinkle 1/4 of the feta on top. Cook slowly for 3-4 minutes until set. Fold and transfer to a plate. Repeat to make four omelettes and serve.
