Spicy Marinade Ribs

Ingredients
- 1.2 kg spare ribs
- 1 onion
- 4 tbsp sugar
- 80 ml apple cider vinegar
- 150 ml dry white wine
- 1 star anise
- 1 bay leaf
- 1 tsp black peppercorns
- 1 tsp mustard seeds
- 80 g orange marmalade
- soy sauce
- 1 tbsp ketchup
- 1 tbsp chili sauce
- 1 tbsp Sesame oil
- Salt
- Thai basil
- lime wedge
Instructions

Wash the ribs, pat dry and cut into sections of about four ribs each.

Peel the onions and roughly dice them. In a large pot caramelize the sugar until light brown, deglaze with a splash of vinegar. Reduce slightly until the sugar has dissolved. Add the white wine, remaining apple cider vinegar and 1 l water. Add star anise, bay leaf, peppercorns, mustard seeds and onions. Add the ribs to the pot and simmer for about 40 minutes.

Meanwhile, in a small pot whisk orange marmalade with 2 tbsp water until smooth. Reduce slightly, strain through a sieve. Mix in ketchup, chili sauce and sesame oil, season with soy sauce.

Remove the ribs from the broth, let cool and brush with the marinade. Cover and marinate overnight.

Preheat oven to 200°C (392°F).

Bake the ribs for about 30 minutes until tender. Garnish with Thai basil and lime wedges before serving.
